Cauliflower is a natural source of vitamin C and folate and adds variety to the vegetable mix early in the diet. Its mild flavor makes it an excellent base for future combinations with broccoli, lentils, chickpeas, rice, and various fruits.

Method of preparation:

Wash the cauliflower well and divide it into small florets.
Steam or boil in a little water for about 12–15 minutes until completely soft.
Blend until smooth, adding a little of the cooking water if necessary.
